Bacon Wrapped Stuffed Venison
Steak

375 degrees
1 onion chopped medium
2 peppers sliced
1-Red 1-Yellow
½ lb Ground pork sausage
4 strips of bacon
4 Venison steaks
optional topping: french fried onions
Start with a hot saute pan with a
little olive oil.
Saute onions and peppers till
soft, remove and set aside
Add ground pork sausage and cook
stirring often until done.
Partially cook bacon strips for
wrap, drain on paper towel
Using small sharp knife cut
venison steak open like a pouch, do not cut completely in half
Stuff with sausage, pepper/onion
mix and wrap with bacon strip, using toothpick to hold together
Sprinkle french fried onions over
steak and bake in hot oven till steak is cooked medium rare;
8-10 minutes depending on steak
size and thickness
I used these side dishes; skin on
rough mashed red potatoes with shredded cheese and asparagus with hollandaise
sauce. You can make the sides of your choice but I thought
these were a good match.
