

In 2007, I worked a summer as breakfast chef at Waterfall Resort on Prince of Wales Island in the Inside Passage of Alaska.
In the afternoons I would fish of the dock for Quillbacks a type of sea bass. I would use a little jig head and a rubber jig and catch fish like crazy. One day I hooked into something a little bigger and jumped into a moored boat to fight the fish.
My pole was snapping and crackling and I thought it would break for sure.
I took my time and played the fish like the professional I am and in 20 minutes or so I tired it out and it came to the surface.
I was in awe at the size of it, and the fish cutters came running with a gaff hook and a baseball bat. They dispatched the halibut and fillet it and put it in my home pack. I could not wait to get home to cook some up on my single burner Camp Chef stove.
There is nothing better than tempura battered halibut fish and chips.
